Ingredients: 

  1. Potato: 250 grams
  2. Black pepper: 1/4 tsp
  3. Red chilli: 1/2 tsp
  4. Roasted cumin powder: 1/2 tsp
  5. Dry mango powder (amchur powder): 1/2 tsp
  6. Chaat masala: 1/2 tsp
  7. Black salt/white salt: based on your taste
  8. Finely chopped mint leaves: 1 tbsp
  9. Finely chopped coriander leaves: 2 tbsp
  10. Finely chopped green chilli: 1
  11. Sweet tamarind chutney: 1 tbsp
  12. Lemon juice: 1-2 tsp

Instructions: 

  1. Wash the potatoes, then proceed to peel them, and then cut them into small cubes.
  2. With the stove set to medium-low heat, fry the cubes of potatoes until they turn golden brown.
  3. In a bowl, toss the fried cubes of potatoes and then add the ingredients mentioned earlier.
  4. Stir the mix properly to ensure that the potatoes get properly covered with the ingredients. Then, serve hot.
Dahi Puri

Ingredients: 

  1. Puris: 8
  2. Boiled & chopped potatoes: 1/2 cup
  3. Chopped onion: 1/4 cup
  4. Tamarind chutney: 2 + 1/2 tbsp

  6. Garlic chutney: 1/2 tsp (optional)
  7. Beaten curd: 1/2 cup
  8. Sev: 1/4 cup
  9. Coriander: chopped (for garnishing)

Instructions: 

  1. Crack every puri at the centre, and in each one of them add 1 tbsp of chopped and boiled potatoes along with 1/2 tbsp of chopped onions.
  2. On top of the 8 puris, now spray 1 tsp tamarind chutney, 1/2 tsp green chutney and 1/4 tsp garlic chutney.
  3. Garnish each puri with sev and coriander after pouring 1 tbsp of dahi on each one of the puris. And there it is, the delicious dahi puris are finally ready for consumption!
Paneer Pakora

Ingredients: 

  1. Dice cut paneer: 150 grams
  2. Besan: 1 cup
  3. Turmeric powder: 1 pinch
  4. Red chilli powder or cayenne pepper: 1-2 pinches
  5. 1/2 teaspoon carom seeds (ajwain)
  6. 1 to 2 pinches of garam masala powder
  7. Asafoetida (hing): 1 pinch
  8. Salt: based on your taste
  9. Water: 2/3 to 3/4 cup
  10. Ghee/oil: fry

Instructions: 

  1. Add 1 cup of besan into a bowl.
  2. Based on the quantities provided, add turmeric powder, red chilli powder, carom seeds, garam masala, hing, and salt into the same bowl.
  3. While mixing these contents properly, begin periodically adding small quantities of water.
  4. We now proceed towards making a comparatively thicker batter using the mix and cut technique.
  5. Begin heating a pan, and add 1-2 cups of ghee or oil. Proceed to the next step only after the pan has become hot.
  6. After the pan has become hot, lower the flame to medium, then add the cubes of paneer into the pan after dipping them in the batter made from besan. Wait for them to turn golden brown.
  7. Serve these paneer pakoras hot with your choice of chutney.
